Pairing wines with chocolates: Keep it sweet

I'm looking for a special wine for Valentine's Day, maybe something to go with chocolate. Can you recommend something that's not too expensive? -- Carrie, Old Bridge When I started out in the wine business 30 years ago, no one ever talked about drinking wine with chocolate. Wine went with beef; with chocolate, we drank coffee.

Today, pontificating about what kinds of wine -- red or white, still or sparkling -- go with what types of chocolate -- milk or dark, mousse or cake -- is a hot topic among foodies and wine geeks. (Don't get me wrong: Some of my best friends are wine geeks.)

The normally sound advice "Drink what you like" doesn't quite work with chocolate, because most wines, in fact, taste awful with chocolate.

The one wine-pairing rule you never want to forget is: If the food is sweet, the wine needs to be sweeter.

ATLANTA Federal inspections will be carried out at hundreds of plants where combustible dust is a workplace hazard, a top safety official said Monday at a sugar refinery where dust is suspected of causing a deadly explosion.

Ed Foulke Jr., head of the Occupational Safety and Health Administration, announced the inspections while visiting the Imperial Sugar refinery in Port Wentworth, where a blast on Feb. 7 killed 12 workers injured dozens more.

OSHA has not completed its investigation of that explosion but is sending letters to 30,000 companies that deal with combustible dust to discuss the dangers, Foulke said in a telephone interview.

Wanz has also been a part of the music community in the area for a decade and a half. And being a music lover, he has met and befriended (and otherwise) many others in the community. The "audience," however, also consisted of fans of certain bands that played, who may or may not even know who Wanz is, including some fans who know of and don't particularly like Wanz but begrudgingly came out anyway based on the strength of the lineup. The two nights at minc were mostly attended by the local electronic music community, which has for some reason always been more or less seperate from the indie rock community. I am involved in both scenes, and in the electronica scene, very few know who Wanz is when I mention him. If this was truly "an audience of Dover's 400 closest friends", I also have to ask why there weren't 400 people inside Sloppyworld or at the outside stage at Dada when the Frenz played.

Is Homeland Security Too Focused on “Guns, Guards and Gates”?

September 11th was a brutal reminder that there are people out there who have the desire and means to kill us in a mass attack, and we have to stop them. "The best defense is a good offense", we like to say, but in this case it's a little trickier than that. We need an offense mindful of long-term gains and a defense more nuanced than smash-mouth football.

"Guns, guards and gates," our bulwark against external threats, remains an essential part of our defense. Yet consider this: attacks attempted or carried out in the UK involved insiders, young Brits willing to kill their fellow citizens. It's hard to employ a simplistic "us vs. them" strategy, when "they" are living and working alongside us.

To better understand this quandry, I recently caught up with Juliette Kayyem, Undersecretary of Homeland Security for the Commonwealth of Massachusetts and a former adviser with the National Commission on Terrorism.
